Bagel Pizzas

Ingredients 

- Plain Bagels
- Marinara  Sauce
- Mozzarella Cheese 
- Any Topping of Your Choice

Instructions

Slice a bagel in half and warm it up in the microwave or toast it in a toaster.  

Top with marinara sauce, shredded cheese, and your toppings. Then finish by warming the bagels up for 30 more seconds in the microwave.

Cauliflower Macaroni & Cheese

Ingredients 

- 3/4 cups: frozen cauliflower
- 1 oz: shredded cheese 
- 1 tablespoon: heavy cream

Instructions

Microwave 3/4 cups of frozen cauliflower in a lidded bowl for a minute.  Chop into small pieces and microwave for another 50 seconds.

Added about 1 oz of shredded cheese and microwave for 10 more seconds.  Then stir in 1 Tbsp of heavy cream until a sauce forms for an extremely healthy macaroni and cheese!

In a 3 quart, microwave safe casserole dish combine butter, garlic and onion. Place dish in microwave and cook on high for 3 minutes.

Place vegetable broth in a microwave safe dish. Heat on microwave until the broth is hot but not boiling (approximately 2 minutes)Stir the rice and broth into the casserole dish with the onion, butter and garlic mixture. Cover the dish tightly and cook on high for 6 minutes.

Cook on high for 10 minutes more. Most of the liquid should boil off. Stir the cheese into the rice and serve.

Risotto

Ingredients 

- 3 tablespoons: butter
- 1 clove garlic (minced)
- 1 onion (chopped) 
- 1 1/2 cups: vegetable broth
- 1 cup: uncooked Arborio rice
- 3/4 cup: white wine
- 1/4 cup: grated Parmesan cheese

Instructions

Pizza Melt

Ingredients 

- 1 tablespoon: butter (room temperature)
- 1 tablespoon: grated parmesan 
- 1/2 teaspoon Italian seasoning
- 2 slices bread 
- 1/3 cup: shredded mozzarella
- 1 tablespoon: pizza sauce 
- pepperoni slices

Instructions

Stir together the room temperature butter, grated parmesan, and Italian seasoning in a small bowl until evenly combined. Spread the Parmesan butter over one side of each slice of bread.

Flip the bread over so the un-buttered side is facing up. Place half of the shredded mozzarella on one slice of bread. Next, add small dollops of the sauce over top of the cheese, followed by the sliced pepperoni. Finally, add the remaining cheese. Place the second slice of bread on top to close the sandwich, butter side facing out.

Place the sandwich in a skillet or frying pan and cook over medium-low heat until golden brown on each side and the cheese is melted on the inside.
