Eggs in Purgatory

Ingredients 

- 3 cups: red bell peppers (thinly sliced) 
- 2 cups: yellow onion (thinly sliced)
- 1/4 cup: water
- 1 (15-ounce) can: crushed tomatoes
- 2 tablespoons: extra-virgin olive oil
- 2 cloves garlic 
- 1/2 teaspoon: paprika
- 1/2 teaspoon: ground cumin
- 1/2 teaspoon: ground coriander
- 1/8 teaspoon: ground cinnamon
- 1/8 teaspoon: cayenne pepper
- 3/4 teaspoon: kosher salt
- 4 large eggs
- Chopped fresh cilantro leaves and tender stems

                                                                                                               Place the bell peppers, onions, and 1/4 cup water in                                                                                                                           a 9 1/2-inch deep-dish microwave-safe glass pie plate. Cover tightly with plastic wrap and microwave on high until the vegetables are tender-crisp, about 8 minutes, stirring once halfway through and re-covering with plastic wrap. Carefully hold the bell pepper mixture back with a spatula or slotted spoon and pour out water into the sink.

Stir in the crushed tomatoes, olive oil, garlic, paprika, ground cumin, coriander, cinnamon, cayenne pepper, and 3/4 teaspoon of the salt to drained bell pepper mixture. Cover the tomato mixture tightly with plastic wrap and poke a small hole in the center of the plastic wrap to let steam escape. Microwave on high until the sauce is bubbly and hot, about 8 minutes.

Use the back of a large spoon to make 4 deep wells in the tomato mixture. Crack 1 egg into each well. Cover tightly with plastic wrap and microwave on high until the egg whites are just set but the yolks remain runny, about 2 minutes and 30 seconds (if the egg whites are not fully cooked then microwave longer in 30 second increments).

Bagel Pizzas

Ingredients 

- Plain Bagels
- Marinara  Sauce
- Mozzarella Cheese 
- Any Topping of Your Choice

Instructions

Slice a bagel in half and warm it up in the microwave or toast it in a toaster.  

Top with marinara sauce, shredded cheese, and your toppings. Then finish by warming the bagels up for 30 more seconds in the microwave.

Cauliflower Macaroni & Cheese

Ingredients 

- 3/4 cups: frozen cauliflower
- 1 oz: shredded cheese 
- 1 tablespoon: heavy cream

Instructions

Microwave 3/4 cups of frozen cauliflower in a lidded bowl for a minute.  Chop into small pieces and microwave for another 50 seconds.

Added about 1 oz of shredded cheese and microwave for 10 more seconds.  Then stir in 1 Tbsp of heavy cream until a sauce forms for an extremely healthy macaroni and cheese!

Blueberry Mug Muffin

Ingredients 

- 1/4 cup: all purpose flour 
- 1 tablespoon: brown sugar 
- 1/4 teaspoon: baking powder 
- 1/8 teaspoon: salt
- 1 pinch: cinnamon 
- 1/2 tablespoon: butter 
- 2 tablespoon: milk 
- 1-2 tablespoon: frozen blueberries 

Instructions

In a microwave safe mug, stir together the flour, brown sugar, baking powder, salt, and cinnamon until well mixed.

Add the butter to the mug and use your fingers to rub or smoosh them together until no large chunks of butter remain and the mixture looks like damp sand.

Stir the milk into the butter/flour mixture. It should now resemble a thick muffin batter. If it’s too dry, add a splash more milk. Sprinkle blueberries over top and push them down into the batter. Microwave on high for approximately 90 seconds.

  1.                                                                                                          Place rice with enough water to cover in a small bowl.                                                                                                                 Soak rice for 2 hours; drain.

  
Stir together the prawns, ginger garlic paste, garam masala, black pepper, cloves, cardamom seeds, cinnamon sticks, salt, yogurt, and oil in a microwave safe bowl until well mixed. Cook in microwave on High until the shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 10 minutes. Remove the prawns from the curry and set aside

Stir the rice, water, and chicken bouillon into the curry and mix well. Cook in the microwave on High until rice is tender, about 10 minutes. Mix in the prawns; return to the microwave and cook on high until heated through, about 5 minutes. Discard cinnamon stick, cloves, and cardamom seeds before serving

Prawn Biryani

Ingredients 

- 1 1/3 cups: uncooked white rice 
- 9 ounces: tiger prawns (peeled and deveined)
- 1 tablespoon: ginger garlic paste
- 1 teaspoon: garam masala
- 1 teaspoon: ground black pepper
- 4 whole cloves
- 4 whole cardamom seeds
- 2 cinnamon sticks
- salt to taste
- 1/2 cup: plain yogurt
- 1/4 cup: vegetable oil
- 1 cup water
- 2 cubes: chicken bouillon
